Dishes & Meals Couscous – A staple dish made of steamed semolina grains, often served with vegetables, meat, or fish. Tajine (Tagine) – A slow-cooked stew made with meat, poultry, or fish, combined with vegetables, dried fruits, and spices, named after the earthenware pot in which it's cooked. Buy pot Chorba – A traditional soup made with meat (lamb or chicken), vegetables, and vermicelli, popular during Ramadan Link Harira – A soup made of tomatoes, lentils, chickpeas, and spices, often eaten to break the fast in Ramadan. Rechta -Algerian dish of thin, flat pasta noodles in a savory sauce. It's a symbolic dish of Algiers cuisine and is often served at festivals. Brik – A deep-fried pastry filled with egg, tuna, or meat, wrapped in thin dough (warka). Mechoui – Whole roasted lamb, often seasoned with simple spices and cooked over an open fire. Mloukhia – A thick green stew made from jute leaves, commonly eaten in Tunisia and Libya. Makroud – A semolina-based pastry filled with date paste and fried or baked, often soaked in honey.
